Coconut Balls

Serves 8

125g desiccated coconut
60g caster sugar
2 eggs, beaten
4 glace cherries, optional
50g dairy-free plain or dairy-free milk chocolate

Preheat oven to 190°c / 170°c fan oven / 375°c / gas mark 5.

Mix the desiccated coconut, caster sugar and eggs together and leave to stand for 20 minutes.

Divide the mixture into eight and mould into balls.

Line a baking tray with greaseproof paper and brush with oil.

Place the balls onto the tray, place half a cherry on top of each ball and bake for 10 to 15 minutes until golden brown.
Leave to cool.

Melt the chocolate, dip the bottom of each ball into the chocolate and leave to set on a piece of greaseproof paper.
