Fruit Fritters

Serves 4 - 6

150ml barista plant-based milk
1 egg
100g gluten-free self-raising flour plus extra for coating
Pinch bicarbonate of soda
Fruit – bananas, apple, pineapple etc

Weigh the gluten free flour and bicarbonate of soda into a bowl.

Beat the plant-based milk and egg together and whisk into the flour.

Strain into a bowl.

Prepare the fruit – slice banana into quarters, slice the apple into quarters and remove the core and skin, slice the skin of the pineapple, cut into quarters, remove the centre and slice into portions.

Heat the oil in a deep fat fryer to 180°c / 350°f, remove the basket.

Coat the pieces of fruit in gluten-free flour, then the batter, and place carefully into the fryer in batches.

When one side is golden brown, turn the fruit over and brown the other side.

Use a slotted spoon to remove from the fryer onto a plate lined with kitchen roll.

Dredge with caster sugar and serve with dairy-free ice cream .
