Fruit Fritters
Serves 4 - 6

1 ripe banana
150g gluten -free self-raising flour
½ teaspoon bicarbonate of soda
½ pint / 285ml barista plant-based milk
Fruit – bananas, apple, pineapple etc
In a mixing bowl, mash a banana with a fork.
Add the gluten-free flour and bicarbonate of soda.
Whisk in half of the barista milk until smooth then add the rest. The mixture should be thick enough to just pour out of a jug.
Prepare the fruit – slice banana into quarters, slice the apple into quarters and remove the core and skin, slice the skin of the pineapple, cut into quarters, remove the centre and slice into portions.
Heat the oil in a deep fat fryer to 180°c / 350°f, remove the basket.
Coat the pieces of fruit in gluten-free flour, then the batter, and place carefully into the fryer in batches.
When one side is golden brown, turn the fruit over and brown the other side.
Use a slotted spoon to remove from the fryer onto a plate lined with kitchen roll.
Dredge with caster sugar and serve with dairy-free ice cream .
