Treacle Tart - serves 8
- 1 x 8in flan case, uncooked (see sweet pastry case)
- 225g gluten free cake crumbs
- 225g golden syrup
- 1 tsp lemon juice

Preheat oven to 190°c / 375°f / gas mark 5.
Prepare the pastry case as per the recipe. I prefer to part bake my pastry case for 10 minutes before filling.
It will depend on your oven whether you need to do this. See the sweet pastry case recipe for instructions.
Warm the golden syrup in a saucepan. Mix in the cake crumbs and lemon juice.
Fill the pastry case and bake for 25 to 30 minutes until filling is set.
Serve hot or cold with custard, cream or ice cream.

Make your sweet pastry and sponge using dairy free margarine in place of butter.
Gem's hints and tips
To make cake crumbs… break up gluten free vanilla sponge up in a food processor until it resembles fine breadcrumbs. Make a batch and keep in the freezer until required or in this recipe you can use gluten free breadcrumbs.
