Rhubarb Crumble - Serves 4

Ingredients

  • 400g rhubarb
  • caster sugar to sweeten
  • 100g gluten free plain flour
  • 100g ground almonds
  • 125g butter or margarine
  • 75g caster sugar

Method

Preheat oven to 190°c / gas mark 5.

Wash and cut the rhubarb into small pieces. Place into a deep oven dish with 2 tbsp water and sprinkle with sugar.

Place the gluten free flour, ground almonds and butter into a large mixing bowl and rub together with your fingertips until it resembles fine breadcrumbs.

Stir in the caster sugar and spread over the rhubarb.

Sprinkle over a handful of Demerara sugar and bake for 30 to 40 minutes until the top is golden brown and the rhubarb is bubbling underneath the crumble.

Serve warm with custard.

how to make this recipe dairy free...

Add a spoonful of dairy free margarine to the rhubarb in place of butter.

Use dairy free margarine in place of butter in the crumble mixture.

Why not try… Apricot and Raspberry Crumble

Cut the apricots in half and remove the stone. Cut into quarters.

Place in a deep oven dish with a knob of butter and sprinkle with sugar.

Bake for 20 minutes. Taste to check the sweetness. Stir in fresh or frozen raspberries.

Cover the top with crumble mix and brown sugar and bake at 190ºc /gas mark 5 for 40 minutes
