Pecan Pie - serves 8
- 1 x 8in sweet flan case, uncooked (see sweet pastry case)
- 120g pecan nuts
- 150g demerara sugar
- 150g golden syrup
- 40g unsalted butter
- 140ml milk
- 1 egg
- 1 egg yolk

Preheat the oven to 190°c / 375°f / gas mark 5.
Spread the pecan nuts over the base of the pastry case and bake for 15 minutes.
Melt the sugar, golden syrup and butter together in a saucepan.
Mix the eggs with the milk and whisk into the sugar mixture.
Strain the custard over the pecan nuts.
Return to the oven for 10 minutes until the custard sets.
Leave to cool and store in the fridge until required.
how to make this recipe dairy free...
Use dairy free margarine in place of butter and your choice of dairy free milk in place of milk (I recommend Almond Milk).
