Key Lime Pie - serves 8
Ingredients
1 x 8in sweet flan case cooked
1 tin condensed milk
2 egg yolks
225ml lime juice
135ml whipped double cream

Method
Prepare and bake the pastry base.
Keep the oven at 190oc/gas mark 5.
Mix together the condensed milk, whipped cream and the egg yolks.
Whisk in the lime juice slowly whisking all the time.
Fill the pastry case and bake for 12 minutes until set.
Leave to cool and refrigerate until needed.
The tart can be decorated or served with whipped cream and dark chocolate.
Alternatively use lemon juice in place of the lime juice for lemon tart.
My friend Julia who I worked with as a pastry chef invented passion fruit tart by using the same amount of passion fruit instead of lime juice.
