French Toast - Serves 2 / 3

If your muffins or sweet bread has gone stale but you don’t want to waste them, why not use them for French toast.
Cut 3 muffins or sweet bread into slices
Beat two eggs together with a pinch of sugar and about 50 ml milk.
Heat a drop of sunflower oil in a frying pan on a medium heat, add a knob of butter.
Dip both sides of the muffin slices into the egg mixture and shallow fry on both sides until golden brown. Drain on a piece of kitchen roll.
Dust with icing sugar and serve with warm maple syrup and fruit salad.

Use dairy free muffins or a sweet bread.
Mix the eggs with your choice of dairy free milk.
Add a knob of dairy free margarine to the oil when frying the buns or just fry in sunflower oil.
