Coconut Balls - makes 8
- 125g desiccated coconut
- 60g caster sugar
- 2 eggs, beaten
- 4 wheat free cherries
- 50g plain or milk chocolate

Preheat oven to 190°c / 375°c / gas mark 5.
Mix the ingredients together and leave to stand for 20 minutes.
Divide the mixture into eight and mould into balls.
Line a baking tray with greaseproof paper and brush with oil.
Place the balls onto the tray, place half a cherry on top of each ball and bake for 10 to 15 minutes until golden brown.
Leave to cool.
Melt the chocolate, dip the bottom of each ball into the chocolate and leave to set on a piece of greaseproof paper.
