Chocolate Truffles - makes about 20

Ingredients

  • 200ml double cream
  • 1 tbsp glucose syrup
  • 150g dark chocolate
  • 150g milk chocolate

    Method

    Chop the chocolate into small chunks.

    Place the cream into a saucepan with the glucose syrup and bring to the boil.

    Turn off the heat and stir in the chocolate until melted together.

    Leave chocolate ganache to set, ideally overnight.

    Truffle ideas

    • Roll into balls and roll in melted chocolate then toasted chopped nuts or flaked chocolate.
    • Mix chocolate brownie trimmings / dried fruits / nuts into liquid ganache, leave to set and roll into truffles.
    • Crush up gluten free cornflakes and mix with ganache to give texture.
    • Add flavoured liqueur to liquid ganache before leaving to set and roll into truffles.

    100g dairy free plain chocolate

    100ml your choice of dairy free milk

    Bring the milk to the boil. Take off the heat and stir in the chocolate. Leave to set, ideally overnight.

    This recipe makes a soft ganache with a light flavour.

    Truffles

    • Place spoonfuls of the ganache onto a baking tray lined with greaseproof paper. The mixture will be quite soft. Leave to set in the fridge then coat with melted chocolate, toasted chopped nuts or cocoa powder.
    • Mix chocolate brownie trimmings / dried fruits / nuts into liquid ganache, leave to set and roll into truffles.
    • Crush up gluten free cornflakes and mix with ganache to give texture.
    • Add flavoured liqueur to liquid ganache before leaving to set and roll into truffles.

    To make white chocolate ganache.

    200g dairy free white chocolate (from your local whole food store)

    100ml your choice of dairy free milk.

    Chop up the chocolate. Bring the milk to the boil. Take off the heat and stir in the chocolate until melted.

    Leave to set, it will be opaque in colour. Beat the mixture to turn the mixture white and fluffy.

    Store the dairy free ganache in the fridge and eat within 5 days.

    To make a denser dairy free chocolate truffle, use soya cream in place of dairy free milk. The mixture may split when you mix in the chocolate. Whisk this for a few seconds to make the mixture lighter and blend together. You may want to add a little icing sugar to sweeten according to taste.

    Gem's hints and tips

    I use half plain and half milk chocolate in my ganache as I think using all milk chocolate is too sickly and all plain chocolate too rich. If you like dark chocolate truffles use all plain chocolate in the ganache.

    To make white chocolate ganache, replace the milk and plain chocolate in the recipe with white chocolate. It will not set as firm as ganache using milk or plain chocolate. The colour of white chocolate ganache is opaque and a little yellow in colour. To make a whiter ganache, whisk up the ganache and use quickly before it sets. Use as for milk or plain chocolate ganache for truffles.
