Bread and Butter Pudding - 4 portions
- 3 slices gluten free white bread
- unsalted butter, at room temperature
- 200g sultanas
- 1 pint milk
- 4 eggs
- 25g caster sugar
- demerara sugar for dusting over the top

Spread the slices of bread with the unsalted butter. Slice into triangles.
Arrange the bread in layers in a 1 pint deep ovenproof dish scattering the sultanas between each layer.
Beat the eggs, milk and caster sugar together and pour over the bread.
Leave the dish for an hour for the bread to soak in the custard before sprinkling the top with Demerara sugar and baking at 190°c / 375°c / gas mark 5 for 35 to 45 minutes until golden brown and the custard has set.
Sprinkle with more demerara sugar and serve with cream or ice cream.
how to make this recipe dairy free...
Use gluten and dairy free bread. Spread with dairy free margarine. Make the egg custard using your choice of dairy free milk. I recommend almond milk.
Serve with dairy free ice cream.
