Black Forest Roulade - serves 6 / 8
- chocolate swiss roll sponge (see recipe)
- 1 tbsp kirsch (cherry liqueur) optional
- black cherry jam
- 225ml Double cream
- black cherries, 1 small tin, or frozen

Make a chocolate Swiss roll sponge.
Whip up the double cream adding a spoonful of icing sugar to sweeten if you like
Drain the cherries from their juice.
Peel the greaseproof paper off the sponge and sprinkle kirsch all over.
Spread black cherry jam and cream all over the sponge.
Add the black cherries and roll up the sponge. Use the greaseproof paper underneath to help roll up the sponge. Peel the paper away as you roll so it doesn’t roll up with the sponge!
Store in the fridge until needed.
Sprinkle the top with icing sugar just before serving.

Make pastry cream using your choice of dairy free milk and use in place of whipped cream or use whipped soya cream.
