Banana and Custard Flan - serves 8
- 1 x 8in sweet pastry case, cooked (see sweet pastry case)
- Pastry cream using 280ml milk as for fruit flan
- 2 or 3 bananas
- 280ml double cream

Slice up the banana and place all over the bottom of the cooked pastry case.
Make the pastry cream, leave to cool slightly before covering the banana completely
Leave to cool then chill in the fridge.
Whip the double cream adding a spoonful of icing sugar to sweeten if desired.
Pipe the cream over the pastry cream or spoon over and make swirl patterns with your spoon.
Sprinkle over grated chocolate or chocolate curls to decorate.

Make the pastry cream using your choice of dairy free milk.
Top the flan with whipped soya cream and dairy free chocolate shavings.
